2016 Zinfandel, Bedrock Vineyard
History
A special bottling, only available to the Dashe Cellars Wine Club. Only 71 cases produced. We have a great relationship with Morgan Twain-Peterson and his father Joel Peterson, who are the owners of Bedrock Vineyards, one of the oldest vineyards in the state. Originally owned by Generals Sherman and Hooker of Civil War fame, these particular vines of Zinfandel were planted in 1888.
Production
We harvested into 1/2 ton picking bins, hand-sorted the fruit on conveyors, and fermented the grapes using the native yeasts on the grapes. The wines were fermented in small bins and the cap of grapes “punched down” by hand, four times a day, to extract flavor and texture without drying tannins. At dryness, the wine was gently pressed in a membrane press and pumped into 60-gallon French oak barrels. The wine was aged for 14 months in one-year or older barrels to keep the vibrancy of the fruit. As the wine aged, it deepened in color and developed a complexity and firm structure that we believe will help the wine improve with up to ten years of bottle age.
